Appetizer Cream Puffs + Filling Variations

Ingredients for Cream Puffs

  • 1 cup water
  • ½ cup (1 stick) butter or margarine
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

Instructions for Cream Puffs

  1. Heat water, butter, and salt in a medium saucepan over high heat to a full rolling boil. Reduce heat and quickly stir in flour, mixing vigorously until mixture leaves sides of pan in a ball.
  2. Place mixture in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 2 and add eggs, one at a time, beating about 30 seconds after each addition. Stop and scrape the bowl. Turn to Speed 4 and beat 15 seconds.
  3. Drop dough onto greased baking sheets in 36 mounds placed 2 inches apart. Bake at 400°F for 10 minutes. Reduce heat to 350°F and bake 25 minutes longer. Turn off the oven. Remove baking sheets from the oven. Cut a small slit inside of each puff. Return pans to the oven for 10 minutes, leaving the oven door ajar. Cool completely on wire racks.

Creamy Feta Olive Filling

  • 1 package (8 ounces) light cream cheese
  • 4 ounces tomato and basil-flavored feta, crumbled
  • 1⁄2 cup light sour cream
  • 1⁄3 cup finely chopped kalamata or ripe olives
  • 1⁄2 teaspoon lemon pepper seasoning
  1. Combine all ingredients in a mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix about 30 seconds, or until blended.
  2. Cut puffs in half and pipe or spoon about 1 tablespoon Creamy Feta Olive Filling into each puff. Serve immediately.

Makes: 2 cups

Sardine and Egg Filling

  • 1 can (31⁄2 ounces) skinless, boneless sardines, drained
  • 6 hard-cooked eggs
  • ½ small onion
  • ¼ cup mayonnaise salt and pepper
  1. Assemble Food Grinder using coarse grinding plate and attach to mixer. Turn to Speed 4 and grind sardines, eggs, and onion into a mixer bowl.
  2. Add mayonnaise, salt, and pepper. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix for 1 minute. Chill mixture thoroughly. Fill cream puffs just before serving as directed above for Creamy Olive Feta Filling.

Makes: 2 cups

Crab Dill Filling

  • 2 cans (6½ ounces each) crab meat, drained
  • 2 stalks celery, cut into 1-inch pieces
  • ½ small onion
  • 1 tablespoon lemon juice
  • ¼ teaspoon dill weed
  • ½ cup mayonnaise salt and pepper
  1. Assemble Food Grinder using coarse grinding plate and attach to mixer. Turn to Speed 4 and grind crab, celery, and onion into a mixer bowl.
  2. Add lemon juice, dill weed, mayonnaise, salt, and pepper. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix for 1 minute. Chill mixture thoroughly. Fill cream puffs just before serving as directed above for Creamy Olive Feta Filling.

Makes: 2 cups

Chicken + Pineapple Filling

  • 1 cup cubed, cooked chicken
  • 2 stalks celery, cut into 1-inch pieces
  • 1 can (8 ounces) crushed pineapple, drained
  • ¼ cup slivered almonds
  • ½ cup mayonnaise
  • ¼ teaspoon paprika salt and pepper
  1. Assemble Food Grinder using coarse grinding plate and attach to mixer. Turn to Speed 4 and grind chicken and celery into a mixer bowl.
  2. Add pineapple, almonds, mayonnaise, paprika, salt, and pepper. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix for 1 minute. Chill mixture thoroughly. Fill cream puffs just before serving as directed above for Creamy Olive Feta Filling.
