How to Make Chocolate Ice Cream?

ICE CREAM MAKER ATTACHMENT RECIPES - CHOCOLATE ICE CREAM

Many recipe variations for chocolate ice cream can be created with your stand mixer attachment, but you'll find the following ingredients as a starting point for most:

A recipe's exact cooking time will depend on the ingredients you need to prepare. For soft-serve, an ice cream recipe can be made in under an hour, and for scoopable, harder ice cream, it may take 3-5 hours:

HOW TO CONTROL ICE CREAM SWEETNESS

It is generally true that chocolate will be more bitter at higher cocoa percentages. Use dark chocolate or semi-sweet ice cream varieties with at least 60% cocoa to make your ice cream less sweet. Choose milk chocolate varieties with higher sugar content if you have a sweet tooth. It is also possible to use unsweetened cocoa powder and adjust the amount of sugar as desired.

The best thing about homemade ice cream is that it can be made to your exact tastes - a task made simple by the variety of chocolates available. Adding other ingredients to your ice cream can increase or balance its sweetness. You can counter sweetness by adding bitter espresso grounds, salted caramel, or tart fruits. On the other hand, you can turn up the sweetness with marshmallows, toffee, brownie pieces or nearly any other confection that complements your chocolate base.

HOW TO MAKE A CHOCOLATE ICE CREAM BASE

Make chocolate ice cream according to the directions on the recipe. Generally, you'll combine egg yolks, sugar, cocoa powder, and salt, then slowly add heated milk. Chocolate, cream, and other flavourings are usually added after this mixture has thickened on the stovetop. Before adding the ice cream base to the ice cream maker, it is best to chill it.

HOW TO SET UP YOUR ICE CREAM MAKER ATTACHMENT

Three main parts make up the KitchenAid® Ice Cream Maker attachment: the freeze bowl, dasher, and drive adapter. It is compatible with all full-sized tilt-head and bowl-lift KitchenAid® stand mixers with one exception3, but the setup process is slightly different. 

Use this guide to attach the KitchenAid® Ice Cream Maker attachment to your stand mixer. 

1. Freeze the freezer bowl for 24 hours before using it and leave it in the freezer until you are ready to add your ice cream base.

2. Attach the bowl to the stand mixer base similarly to a regular bowl.

3. Place the dasher inside the bowl.

4. Connect the drive adaptor to the stand mixer motor head.

5. Lower the tilt-head or raise the bowl, depending on your model until the drive adaptor engages the dasher.

HOW TO CHURN ICE CREAM

1. Turn the stand mixer to “Stir” before adding your ice cream mixture.

2. Pour your ice cream base into the freeze bowl with the dasher churning.

3. Let run for 20-30 minutes until the desired consistency is reached.

4. Add in any additions like nuts or candies after about 15 minutes of run time.

5. Remove the dasher.

6. Transfer mixture to serving dishes for soft-serve or to an airtight container using a spatula or wooden spoon. For hard ice cream, freeze for 2-4 hours.

3. Ice Cream Maker attachment is not compatible with KitchenAid® bowl-lift stand mixer model KPM5 or the mini tilt-head stand mixer models.

IS A STAND MIXER ENOUGH TO MAKE CHOCOLATE ICE CREAM?

Yes. With a regular stand mixer bowl and a wire whisk, you can thoroughly combine your ingredients for your ice cream base even without the Ice Cream Maker attachment. Mixture should be put in a freezer bag and frozen flat after it has been combined. After the frozen mixture has been broken up, blend it or process it in a food processor until it is smooth. 

The mixture can also be poured into a freezer-safe container, such as a glass loaf pan and frozen for 4-6 hours.
